Let me explain the beauty of this pudding. We're talking about hot sticky jam covering a light sponge cake base, baked till the jam melts into the cake (glorious)... with a meringue layer on top, which is then all baked once more till perfectly golden brown. Fresh from the oven, the pudding is served with warm home made custard.
